I don’t know about you but I’m a collector of recipes. I was looking through mine the other day planning to use up some overripe bananas and discovered that I had about 5 different recipes for banana muffins/bread. Some of them I’d not used in a while and I’d not made notes on them so I coudn’t remember if I had liked how they turned out.
I hemmed and hawed over it forever until I finally decided to combine what I liked about a few of them into one recipe. This is what I came up with:
Trina’s {Partially Whole Wheat} Chocolate Chip Banana Muffins
- 1 egg
- 1/2 cup unsweetened applesauce
- 1/2 cup yogurt {plain, vanilla or even strawberry!}
- 1 tsp vanilla extract
- 1 cup whole wheat flour
- 3/4 cup all purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 over ripe bananas, mashed
- 1/2 – 3/4 cup chocolate chips {I use semi sweet}
Directions:
1. Combine the first 4 ingredients {wet: egg, applesauce, yogurt, vanilla} in a bowl.
2. In a separate bowl, combine the next five ingredients {dry: flours, baking powder, baking soda, salt}.
3. Stir the wet ingredients into the dry ingredients until just combined.
4. Fold in bananas and chocolate chips.
5. Bake at 350* for 20-25 mins {I did 22 mins}
The yogurt in these muffins helps to maintain moisture even when they are a few days old. I ate these for breakfast last week with my chai tea latte {aka hug in a cup} and it was delicious!
