Chunky Avocado Salsa

I’ve got a unique salsa recipe to share with you that my good friend Brittaney introduced me to.  I made this for the first time on the 4th of July for a family get together and I was stunned when even the kids {not mine, of course, but the others there} ate it and there were ZERO leftovers.  My husband even ate it, which is saying something considering he doesn’t eat vegetables, especially raw ones.  I’ve made it several times since then and tweaked it to fit our tastes.

Ok, enough gabbing, on to the recipe!  The original comes from The Coterie Blog, but I’m going to list it out here because of the tweaks I made.

Chunky Avocado Salsa

1 can petite diced tomatoes {Hunt’s jalapeno flavored works great, plain is good too}
1 can sweet white corn, drained
1 small red onion, chopped {or half of a medium size}
1 can of black beans
, drained
2 avocados, diced
Garlic salt w/ parsley
Tapatio Sauce {or any hot sauce}
Salt and pepper to taste

Add black beans, corn, onion, tomatoes to a bowl and mix.  Add in the seasonings and mix again.  Taste test to make sure seasonings are to your liking, if not add more and mix again.  Lastly add in the diced avocado and gently mix to keep the avocado from getting mashed.  You can serve immediately or store overnight.  I did notice that when stored overnight the seasonings really tone down and I’d have to add more the next day.

We eat this as a dip with our favorite chips, the Archer Farms organic blue corn with flax seed from Target.  I’ve also made nachos with these chips, taco meat and topped it with this salsa.  So so good.

  1. This looks SO delicious!!! Would you believe I only tried Avocado a year ago?! I don’t care for it by itself, but I love it sliced on a sandwich, in salsa etc. I’m def pinning this for sure!!!
