Homemade Coconut Butter

I stumbled upon a fun blog a few months ago that focuses on healthy desserts.  I found a recipe in her archives for coconut butter and when I saw how easy it was to make, I knew I had to try it.

Are you ready for the easiest recipe ever?  Actually, I don’t know that it qualifies as a recipe since there’s just one ingredient.  ONE!


The only equipment you need is either a Vita Mix, Magic Bullet or a food processor.  I used a food processor.  {This is the one I have and I love it.}

All you do is dump your bag of unsweetened shredded coconut into the bowl and blend.  That’s it.

Blend, blend, blend.

And then blend some more…

I ran my food processor for about 10 mins total, stopping every so often to scrape down the sides.

When it was done it was runny and warm {from the heat of the motor haha}.  Before I bottled it up, I blended in two Stevia packets.

So very rich and coconut-ty.  So very healthy.

So very good on some toast with jam.

Or on top of a Single Lady Banana Muffin
