Fifty-Two New, Week 41: Easy Chunky Potato Soup

Can you believe I’ve never made potato soup before?  My mom made it all the time when I lived at home and I loved it!  Whenever we go to O’Charley’s I look forward to eating their potato soup yet I’ve never tried to make any myself.

On the heels of my crockpot mission I planned to make some in the crockpot last week but didn’t because we still had leftover food to eat.  So Sunday night when I was planning dinner I thought I’d look for some easy potato soup recipe since I didn’t have time for a crockpot version.  And boom, I found it{I wanna thank those of you on Twitter who sent me your recipes!  I ended up finding one that was easy and had 99% of the ingredients for.}

Chunky Potato Soup {I had to made a few changes so I’m listing this as I made it, see link for original recipe}

Ingredients
  • 4 medium potatoes, cubed
  • 1/2 medium onion, chopped
  • 7-8 baby carrots, chopped
  • 2 cups chicken broth {made with water/bullion cubes}
  • 3 tablespoons butter, cubed
  • 3 tablespoons all-purpose flour
  • 3 cups whole milk
  • 1 teaspoon parsley flakes
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • Cheddar cheese {added to individual bowls as served}
Directions
  1. In a large saucepan, combine the potatoes, onion, carrot, and broth. Bring to a boil. Reduce heat; cover and simmer for 12-15 minutes or until vegetables are tender; lightly mash.
  2. Meanwhile, in a small saucepan, melt butter; stir in flour until smooth. Gradually stir in milk. Bring to a boil; cook and stir until thickened. Stir into potato mixture. Cook and stir until thickened and bubbly. Add parsley, salt and pepper. Remove from the heat.  
  3. Serve in shallow bowls and add cheese if desired.  Enjoy!

{I also added a few shakes of Bacon Bacon dip mix after it was cooked as an afterthought but is certainly not necessary and most people won’t have this.  But you could always add cooked bacon if you wanted.}

VERDICT:  I had this prepared in about 30 minutes which is awesome.  This soup has the best flavor and is so creamy.  I dubbed it the BEST POTATO SOUP EVER.  My hubs and mom liked it very much and I will most certainly be making it again!
